Classic Shakshuka
This Classic Shakshuka is bold, comforting, and incredibly easy to make. With just one pan and a handful of ingredients, you get a dish that’s packed with flavor and perfect for any time of day!

Ingredients
2 tbsp EV olive oil
1 large onion, finely chopped
1 red bell pepper, diced
3 cloves garlic, minced
1 tsp ground cumin
1 tsp smoked paprika
½ tsp ground coriander
½ tsp chilli flakes (optional, for heat)
2 x (400g) Tins organic chopped tomatoes
1 tbsp tomato puree
½ tsp salt (adjust to taste)
¼ tsp black pepper
6 eggs
½ cup crumbled feta cheese (optional)
Fresh parsley, for garnish
Fresh Sourdough bread, for serving
Preparation
Step 1
Sauté the aromatics:
Heat olive oil in a large deep frying pan over medium heat.
Add chopped onion and red bell pepper, cooking until soft (about 5 minutes).
Stir in garlic, cumin, smoked paprika, coriander, and chili flakes, and cook for another minute until fragrant.
Step 2
Simmer the sauce:
Add the tins of tomatoes, tomato puree, salt, and pepper.
Stir well and let it simmer for 10-15 minutes, allowing the flavours to meld and the sauce to thicken.
Step 3
Poach the eggs:
Make small wells in the sauce and gently crack in the eggs.
Cover the pan and cook for 6-8 minutes, or until the egg whites are set but yolks are still runny.
Step 4
Serve and enjoy:
Sprinkle with crumbled feta (if using) and fresh parsley.
Serve hot with fresh sourdough bread for scooping up the delicious sauce!
