Classic Shakshuka

This Classic Shakshuka is bold, comforting, and incredibly easy to make. With just one pan and a handful of ingredients, you get a dish that’s packed with flavor and perfect for any time of day!

Ingredients

  • 2 tbsp EV olive oil

  • 1 large onion, finely chopped

  • 1 red bell pepper, diced

  • 3 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp ground coriander

  • ½ tsp chilli flakes (optional, for heat)

  • 2 x (400g) Tins organic chopped tomatoes

  • 1 tbsp tomato puree

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • 6 eggs

  • ½ cup crumbled feta cheese (optional)

  • Fresh parsley, for garnish

  • Fresh Sourdough bread, for serving

Preparation

Step 1


Sauté the aromatics:

  • Heat olive oil in a large deep frying pan over medium heat.

  • Add chopped onion and red bell pepper, cooking until soft (about 5 minutes).

  • Stir in garlic, cumin, smoked paprika, coriander, and chili flakes, and cook for another minute until fragrant.


Step 2


Simmer the sauce:

  • Add the tins of tomatoes, tomato puree, salt, and pepper.

  • Stir well and let it simmer for 10-15 minutes, allowing the flavours to meld and the sauce to thicken.



Step 3


Poach the eggs:

  • Make small wells in the sauce and gently crack in the eggs.

  • Cover the pan and cook for 6-8 minutes, or until the egg whites are set but yolks are still runny.


Step 4


Serve and enjoy:

  • Sprinkle with crumbled feta (if using) and fresh parsley.

  • Serve hot with fresh sourdough bread for scooping up the delicious sauce!
